This recipe is a sure way to increase your iron when your energy levels are dropping. It has loads of iron from the mushrooms, broccoli, beef stock, spinach and herbs. If you haven’t noticed yet we use tonnes of herbs in the dishes as they are gems full of nutrients and anti-bacterial properties. If you are on a candida diet, replace the mushrooms with zucchinis, use fridge stored nuts and use fresh stock. Enjoy the beautiful stock and crunchy peanuts.
Ingredients
600 g noodles (your choice)
1 large onion, 4 cloves garlic, 3cm ginger, 1 medium heard of broccoli, handful of spinach, 1 punnet Swiss mushrooms/shitake/portobello
200 g beef pieces (this can be left out), sesame oil, soy sauce, oyster sauce, salt and pepper
600ml beef stock or Vegetable stock, 1 bunch of coriander, handful of crushed peanuts
Method
Large dice onions, ginger, garlic and brown
Brown beef pieces at this stage as well as mushrooms
Add broccoli, a drizzle of soy sauce, salt n pepper, tbsp oyster sauce (you can add more if needed)
Add the beef or Vegetable stock
Include cooked noodles of your choice, stir fry
Add spinach, coriander and peanuts and stir through
Serve with the beautiful stock
