You will love this pasta especially with lots of parmesan cheese, if that is your pasta ritual. It is an especially healthy recipe, due to it being a high hit of Vitamin C and it is high in Anti-bacterial ingredients such as Oregano, garlic and fennel.
Ingredients
Punnet of swiss brown mushrooms
3 large cloves of garlic, bulb of fennel, 1 large onion
1 large red pepper, 300gms salami (can be substituted for tuna, sardines, anchovies)
1 bottle of passata, 3 tbsp tomato paste, 300 gms kalamata olives
Olive oil, salt/pepper, 2 tbsp dried oregano, 600 ml filtered water
Any pasta of your choosing for 4 persons
Method
Start by caramelizing the onion, fennel then garlic
Dice up Salami, olives, peppers, mushrooms and add them to the pot
Once caramelized, add salt and pepper and 2 tbsp dried oregano
Add passata and tomato paste and incorporate
Add cooked pasta and parsley (at this stage you can include a drizzle of cream or cheese)
Mix and serve
